Roast potatoes
Peal and boil for 15 m
Roughen the spuds place in tray   Add duck fat.    Salt and pepper oven at 180.    Time. 40m
After 30m squeeze down the potatoes to open them up a bit     Baste.

Stuffing
Breadcrumbs.      4 streaky rashers.    Herbs
Vacuum packed chestnuts crunched
 Whole nutmeg
Sausage meat
Glug of port or Sherry
Clementines


Cauliflower and broccoli cheese dish
Boil the broccoli.    Add the cheese.  Power whisk to make a sauce
Put cauliflower in a dish and pour over the sauce

White chocolate cheese cake

150 gr Digestive biscuits

25g dark chocolate

50gr butter


Butter + chocolate melt over low heat

Add biscuit crumbs and stir

Don’t let it get too hot or biscuits will soften the biscuits

Put mixture into a circular lining tin  Press down firmly     This is the base

The Filling

300gr white choc. Buttons     Melt over pan of hot water

 400 gr full fat cream cheese

2 eggs  whip

ESour cream into the cheese

Add t spoon vanilla extract to the eggs

Chop 4 bulbs of fragrant stem ginger

Whisk cream cheese and sour cream

Add egg mixture and stir in the melted white chocolate 

            
  Add the ginger and fold in
Pour the lot into the centre of tin
Bake for 45 m. At 150F.  Until firm
Holly leaves decoration.    
Using a stencil covered with see through paper pipe the chocolate leaves





Drape the holly leaves over a rolling pin so they are curved.
Can prepare early and fridge.
Cake out of fridge.   Remove tin ring surround
Pipe double cream  and decorate with leaves
Add a few rasberries
Dust with icing sugar
